DOWNTOWN.   A meal at George consists of a succession of inventive and flavor-packed small plates. You might start with potato-wrapped smoked beef salad with cured foie gras, then move on to duck confit stuffed gnocchi with candied pistachios or rabbit sausage with curried split peas. The third course could be pecan dusted bison ribeye or veal tenderloin with lemon-thyme pasta.
