DOWNTOWN. Husband-wife team David Mincy and Paige Robinson run one of Victoria's most popular restaurants. Located in historic Old Town, the exposed brick, old books and candlelight make Camille's the perfect spot for a romantic dinner. The menu is composed of year-round favorites as well as rotating seasonal specials and a weekly ethnic specialty. Fresh local seafood and produce are used for such dishes as wild mushroom polenta, smoked salmon pinwheels with avocado and horseradish cream, and their signature lemon, ginger and rock prawn bisque. Camille's offers an extensive wine list and knowledgeable servers who can help guide your selections.

INNER HARBOUR. Reservations are strongly recommended at Victoria's most elegant restaurant, located in The Empress Hotel. A mahogany ceiling, tapestry-covered walls and candlelight set the mood for a fine-dining experience. The seasonal dinner menu showcases the culinary team's skill with fresh local ingredients, and might include dishes such as long pepper berry rubbed lamb loin with green olive & goat cheese risotto. During the warmer months, try to get a table on the veranda, which offers absolutely lovely views of the Inner Harbour.

MALAHAT. When this cozy restaurant opened in 1946 high up on Malahat Mountain, it quickly became a popular stopping place for travelers and locals. Purchased and completely renovated in 1997 by experienced restaurateurs, the property has expanded to include an 11-room B&B. The restaurant offers an eclectic menu: pear and sweet potato soup, roasted garlic bulbs with Cambazola cheese, seafood tempura, pasta, burgers, quiche, steaks and several vegetarian dishes such as tortilla pie (layered black beans, veggies, cheese and tortillas). For the best views, you'll want to sit on the patio, but even from inside the vista is impressive.

INNER HARBOUR. Casually elegant and trendy, Milestone's appeals to folks who enjoy their comfort food on the "slightly adventurous" side. Although it's part of a small chain, the restaurant successfully avoids the cookie-cutter approach to atmosphere and decor, so each location has its own personality. The menu includes traditional favorites as well as more modern interpretations of classics. Start with spinach-artichoke dip or popcorn shrimp, or sample a steamy bowl of corn and potato chowder. Mains include everything from grilled steaks and seafood to Asian-style noodle bowls and smoked baby back ribs with cranberry corn relish. There's also a solid wine list and a bevy of tasty choices for vegetarians, carb-avoiders and other health-conscious types.

FERNWOOD / HILLSIDE. Part of a small Canadian chain, Moxie's offers an inviting, slightly rustic atmosphere with stone fireplaces and dark woods. The extensive menu is casually upscale and internationally influenced. There are several creative meal-size salads and interesting gourmet pizzas (tandoori chicken; asparagus and goat cheese), plus steaks, chicken and seafood dishes. At lunch, you can also opt for a tasty burger or sandwich. For dessert, try the brownie (an indulgent concoction of white and dark chocolate with vanilla ice cream), or the juicy blackberry apple crisp. Many options are available in half and full sizes, and the children's menu will appeal to just about any hungry kid.

OAK BAY. George and Linda Szasz run a beautiful restaurant settled comfortably in a beautiful old building decorated with local artwork. They serve classic bistro dishes focusing on the area's fresh seafood and locally grown organic produce. Mussels are served with garlic, preserved lemon, onions, tomatoes, Italian parsley and white wine, and the goulash is a treat. Breads, soup-of-the-day and desserts are all prepared daily, in-house, and the kitchen will accommodate special diets, so vegetarians are welcome!

SOOKE. The prix fixe menu ($75-$100) changes daily here and that means you get the freshest, most creative preparation of local game, seafood and produce. The restaurant grows over 400 varieties of vegetables, herbs and edible flowers, and their fresh sea asparagus is harvested directly from the shorefront. Try seared scallops or nori rolls with gooseneck barnacles in mustard broth, or Chinook salmon with red wine and gooseberry sauce. A vegetarian option is always available, and the extensive wine list includes many local vintages. Located on a bluff overlooking Sooke Harbour, the view alone makes this restaurant worth the drive from Victoria. Reservations mandatory.

DOWNTOWN. What a view! From the top of the Chateau Victoria Hotel, Vista 18 showcases the beauty of Vancouver Island from the ocean to the mountains, and there's not a bad seat in the house. Linger over cocktails while you peruse the menu, a far-reaching tome that's divided into Earth (vegetarian), Ocean (seafood), Air (fowl), and Land (beef, pork, lamb) sections. Order from just one section or mix it up, whatever appeals to you. The food is colorful, artfully presented and fabulous. A tapas menu, consisting primarily of smaller tidbits of main course dishes, is available at the bar, and there's live jazz on Friday and Saturday evenings.
