FOGGY BOTTOM. An Art Deco-style tribute to high society and excess, Prime Rib serves some of the region's best aged beef and freshest seafood. With a decidedly festive air, Prime Rib is, even in the eyes of Washington's elite, an upscale place to celebrate. The shining black bar, leopard-skin rugs, tuxedoed waiters, highback leather chairs and live piano are extravagant touches. Choose from a phenomenal wine list, and enjoy steak au poivre and center-cut veal chop served in its natural juices. Later in the evening, the bar is a stylish place to be seen. DUPONT CIRCLE. Whether it's rare or well-done, prime corn-fed beef is this steakhouse's trademark. A favorite of the business set, the place has a romantic ambience that's equally suited to special-occasion dinners. Each cut of meat is sublime, boasting sensational flavor and texture thanks to the signature "cooked from the top down" technique. ΐ la carte items include gulf shrimp in creole rιmoulade sauce and crispy French-fried onion rings. If you make it to dessert, consider the luscious chocolate praline encore or maybe chocolate chunk bread pudding. Smart casual attire and reservations recommended.

DOWNTOWN. Convenient to a host of area attractions, this esteemed steakhouse is a Midwest classic that's staked a claim on the Atlantic coast. Known for tableside presentations (yes, that's a live lobster on the cart), Morton's is famous for its 24-ounce porterhouse and hearty portions. Sides must be ordered separately at additional cost, and the menu offers seafood, chicken, and veal for those who don't relish red meat. Wine is available, and expectedly, the atmosphere is plush and enveloping. Reservations recommended.

CAPITOL HILL. Large windows provide excellent views of Capitol Hill at this downtown steakhouse. The upscale restaurant features private dining areas, along with a rooftop terrace that's perfect for special functions. The menu offers a variety of meats, game, fish, and fowl. Perhaps most interesting, however, is the place's wine repository it features more than 3500 bottles of American wines, hailing from every single US state. Smart casual or business dressy attire. DOWNTOWN. Amid rich colors and polished woodwork, you'll find some of DC's best steaks. Celebrated for its porterhouse, Bobby Van's attracts folks who have access to sturdy expense accounts. They come for prime cuts of meat, shipped to the restaurant and dry-aged on the premises, imparting both flavor and tenderness. Other popular options include the New York strip, short ribs, braised lamb shank, and lobster. While the company's paying, check out the substantial wine list, and take note of daily specials, which showcase a few unexpected treats.

DOWNTOWN. At The Capital Grille you'll find superb food in a dramatic dining room where you can sink into a burnished leather chair, order a Manhattan and interact with the powerful Washington elite. The discreet service is flawless, the menu is as impressive as the atmosphere, and the dry-aged steaks are considered some of the best in the city. The 22-oz. Delmonico is flavorful and cooked to your specification, and for those whose palates lean more to the sea, fresh seared salmon with mustard sauce just might do the trick. A little more relaxed than many other Washington, DC restaurants, this genteel establishment offers thick porterhouse steaks and a tender New York strip, served alongside homemade mashed potatoes that melt in your mouth. The masculine, wood-and-leather decor befits a restaurant specializing in steaks and cigars, and the owners are proud that almost every cut is still on the bone, which they say imparts more juiciness and flavor. DOWNTOWN. They may not always agree in Congress, but Democrats and Republicans find common ground at this plush establishment. The menu, steeped in the traditions of Continental cuisine, knows how to adapt to the times. It updates Lobster Thermidor with a brandy bechamel sauce, sans parmesan, and gives the rack of lamb added kick with goat cheese and garlic. Along with steaks and chops, diners find coq au vin, Dover sole, and grilled swordfish on shaved fennel. A wine list with 300-plus vintages accommodates most any request and may even lead to agreements that reach beyond dinner.

DUPONT CIRCLE. For a classic fine dining experience in our nation's capital, you can't beat The Palm. While there, you're likely to see scurrying Secret Service agents and legislators recognizable from C-SPAN, and regulars have been caricatured on the walls for decades. USDA Prime steaks are justifiably famous, jumbo Nova Scotia lobsters are delicious, and Italian dishes reflect the restaurant's heritage. Delectable sides include cottage fries, creamed spinach and fried onions. The casual yet refined atmosphere and outstanding service accommodate a relaxed meal or a business meeting with equal aplomb. DOWNTOWN. This 19th Street steakhouse is the real deal, and its traditional, masculine decor gives heed that this is where meat-eaters feast. Filet mignons, sirloins, and prime rib are perfectly cured and aged and seem to melt before even getting to your mouth. If seafood is more to your taste, Smith and Wollensky serves delicious steamed lobster, grilled salmon, and other delicacies. Business casual attire. Reservations accepted.
