The Buckhorn Exchange named best buffalo burger in Colorado

The Wines of Colorado, Grind, 520 Grill and Dillon Dam Brewery also winners

The open plains of Colorado are dotted with herds of American bison, commonly known as American buffalo. With meat leaner than beef, buffalo has become a popular alternative, appearing on burger menus across the state.

  • Empire Burger
    Breckenridge

    For a small extra charge, diners can sub a buffalo patty for any of the burgers on the menu at Empire Burger in Breckenridge. Interesting options include the Kona Burger with Swiss, ham, pineapple and firecracker sauce, and the Green Chile Cheeseburger topped with pepper jack cheese and roasted green chile.

  • Crave Real Burgers
    Multiple Locations

    The buffalo burger from Crave Real Burgers is called the Campfire, and it comes topped with raspberry barbecue sauce, crispy poblano rings, pepper jack cheese and coffee-dusted onion strings. Any burger on the Crave menu can be made with a buffalo patty instead.

    Diners at 520 Grill in Aspen can choose all-natural, grass-fed Bison as a meat option for their burger. Fresh, never frozen bison meat is sourced from ranches in Wyoming and Montana and is often included in a special, like the Buffalo Bill Burger with caramelized onions, cheddar cheese and house sauce, or the BBQ Buffalo Bill Burger with the addition of onion rings and BBQ sauce.

    The Grind in Glenwood Springs has two buffalo burgers on their menu. The SXSW comes with lettuce, pico de gallo, jalapeños, avocado mash, pepper jack cheese and chipotle mayo, while the Will Cody is topped with lettuce, bacon, fried jalapeños, KC BBQ sauce, green chili sour cream and American cheese.
