Tucson pizza-lovers, rejoice: There's a new pizza place in town, and it promises to deliver fast, fresh gourmet pizza.
What's so different about the pizza at Pieology? The restaurant's fast-casual set-up lets you build a custom-order pizza from scratch, with your choice of unlimited toppings. The combination of fast service and unlimited flavor combinations means you can create a piping hot "personally-inspired" pizza in just a matter of minutes.

All the pizzas here are made on 12-inch thin crusts, which are made fresh daily. To order, start by selecting one of the house-made sauces. Options include a red tomato sauce, three-cheese Alfredo, herb butter, olive oil, fiery Buffalo sauce, pesto and a barbecue sauce.
Then move on to the meat and cheese station, where you can pick from mozzarella, ricotta, parmesan, feta and gorgonzola. Meat options include pepperoni, sausage, meatball, all-natural chicken, spicy chicken, ham and bacon.
Finally, pick out your choice of unlimited veggie and herb toppings. These include classic pizza toppings like mushrooms, onions and black olives, but you'll also find gourmet options like artichokes, fresh basil, kalamata olives, fresh cilantro, spinach, garlic pineapple, jalapeños, banana peppers and even fresh corn.
You can load up your pie with as many of these toppings as you please!
If all these choices seem a bit overwhelming, there's also the "Pieologist's Favorite," a menu of classic house specialty pies. Meat-lovers will want to try the Mad to Meat You, which comes stacked with pepperoni, saussage and meatballs.
For lovers of fettuccine Alfredo, there's the Alfredo's Alfredo, which has mushrooms, spinach, basil and grape tomatoes baked onto a base of creamy three-cheese Alfredo sauce and olive oil. The results bring together all the classic Alfredo flavors in pizza form.
For diners seeking healthy alternatives, Pieology also offers Caesar or Classic Organic salad options. You can also request a whole wheat or gluten-free crust on your pie.
If you have room for dessert, don't miss the sweet cinnamon sugar strips. The sticky-sweet treats are a hit with kids, but any sweet-tooth will love them. There's also a buttery version that makes for a tasty side treat.
The dining room at the Tucson location is spacious enough for groups, but expect to see long lines during the busy lunch rush. Not too worry, though. The smoking hot, open-flame oven bakes most pizzas in less than five minutes.
