Certain restaurants are known for their expertise at turning out signature dishes really well. They've pinned down the ingredients, mastered the process, and gained a strong following as a result. Bermuda has had much success cultivating great restaurants and creating a substantial market for Seafood. Locals can't get enough of the city's excellent food, and you'll often find them, along with eager tourists, at popular Port O' Call or at Freeport Seafood Restaurant & Bar, a major player in the field. Make sure you see what all the fuss is about!

5 Lido
Eat indoors or outdoors at this ocean-side restaurant and you'll be able to see the stars — the dining room has a glass ceiling. The seasonal menu constantly changes, but the specialty pastas are always superb. Try lobster ravioli or spinach and potato gnocchi in a sauce of cheese and Italian sausage. Veal in port wine, grilled rockfish and roasted chicken with rosemary giblet gravy are also staples. If you're feeling adventurous, try one of the chef's casseroles — the ingredients depend on what was fresh that day. (441-236-9884)

4 Port O' Call
This dining room's sea-faring theme, complete with cedar and brass trim, reminds you of an old steamship's interior. The menu is primarily seafood and changes every two weeks to reflect the freshest catch. Curried lobster, blackened scallops and yellow fin tuna with salsa are among the available entrees. Expertly cooked steaks appeal to land lubbers. The dessert menu includes several decadent parfaits. (441-295-5373)

3 Freeport Seafood Restaurant & Bar
This intimate bar and restaurant serves everything with friendly island flair. Sit on the patio and enjoy the view of the historic dockyard. Try a pasta or curry dish from the creative menu, or sample some of the freshest seafood on the island. Before, during or after your meal, be sure to try the house drink — fresh mango juice! You can savor a glass with or without a splash of something stronger. (441-234-1692)

2 Lobster Pot & Boathouse Bar
This restaurant has been a Hamilton favorite for almost 30 years. The house specialty is lobster; Caribbean and Maine varieties are both available and can be cooked four ways. Fish platters come heaped with hogfish, wahoo, tuna or rockfish, and they're cooked to your specification, either in lemon-butter or grilled amandine. Bermuda fish chowder, fortified with a generous dose of black rum, has a huge following on the island. (441-292-6898)

1 Ocean Club
Even if the seafood weren't so delicious, dining here would be worth it for the view alone. The restaurant's large windows look out over a pink sand beach where you can watch the sun set. Fresh fish dominates the menu; possible options include shark, barracuda, tuna or mahi mahi. All may be ordered broiled or sautéed in butter. For dessert, feast on banana fritters with Bermudian black-rum sauce. (441-238-8000)
