Tucked away in the exquisite luxury boutique Grand Hotel du Palais Royal is this lunch and dinner gastronomic restaurant. The chef, Jean-Yves Bournot, put his years in under Chef Yannick All�no (3 stars) and his hard work and perseverence shows. Cuisine has an emphasis of lightness, so when foie gras is served here it will more likely be in the form of a mousse or an emulsion and will grace a salad of watercress and fresh figs for example. The setting is exclusive and with the new pedestrian zone that fronts off its ground floor terrace, onto the Place Valois, there is a lovely option of outdoor dining without the noise and exhaust of cars, buses and taxis whizzing by. Wine list offers options of Puligny-Montrachet and Meurseault along with other selections that pair nicely with the dishes.
