9 Rampur Kitchen
Tucked into a corner of the upscale Khan Market is this little Muslim restaurant, which serves its meals on copper plates. The house specialty is haleen, a ground mutton that is eaten with fresh, warm bread. The mutton kebabs and stewed chicken curry are also delicious. For a special treat sample one of the homemade desserts. The rice pudding is creamy and delicious, as is the bread fried in sweet saffron sauce. No alcohol. Reservations not accepted on weekends. Casual to smart-casual attire. (91-011-2463-1222)

8 Park Balluchi
This Indian barbeque restaurant is housed in a glass structure that looks out on a lushly landscaped park. Try the grilled chicken marinated in saffron or the grilled farmer's cheese stuffed with nuts, dates, currants and mushrooms. House specials include the squash stuffed with cottage cheese and herbs then cooked in a clay oven, and a kabab of cheese and vegetables. (Limited menu selections available between 3:00pm and 6:00pm.) Casual to smart-casual attire. Reservations necessary. (91-011-2685-9369)

7 Spice Route
This well regarded restaurant is a treat for the eyes as well as the taste buds. The dining area is divided into nine sections corresponding to the nine aspects of life. Each section is decorated accordingly — wealth is plated in gold leaf, for example. The traditional spice route stretched from Kerala, through Sri Lanka, Burma and Thailand and on to Vietnam, and the cuisine draws from all of these influences. Try the lobster stir-fried with ginger and mushrooms in traditional Thai style or the chestnuts cooked in Sri Lankan curry. Courtyard seating is available. Reservations necessary. Formal or stylish attire. (91-011-4111-6605)

6 Punjabi by Nature
This family-friendly spot serves traditional Punjabi cuisine in a festive atmosphere. Request a table on the ground floor where you can watch the excitement in the kitchen. For a quieter experience you can choose the dining room upstairs, and there is a bar on the top floor for after dinner drinks. Traditional golgappas are fried dough filled with spicy water. This restaurant became famous — or infamous — for filling them with vodka instead. Try fresh lobster cooked in a tandoor oven or the house chicken curry. Vegetarians have plenty of spicy vegetable platters to choose from. Casual attire. Reservations suggested. (91-011-4611-7000)

5 Naivedyam
Naivedyam serves traditional Udupi cuisine, a style of vegetarian cooking from South India. All diners begin their meal with a pepper-spiced soup called rasam. Popular entrees include the dosas, which are large pancakes made from semolina and come stuffed with spicy potatoes or vegetables. Or try a rice "stir-fry" served with coconut chutney and tomato-y lentil stew. Casual to smart-casual attire. Reservations accepted. (91-011-2696-0426)

4 Moti Mahal Delux
Chicken lovers have found a home. Chicken makhni or butter chicken stewed with tomatoes is the specialty of the house, but the chicken tikka tandoori and chicken curry are also excellent. Each meal comes with zippy pickled onions, and the rice seasoned with cumin makes a wonderful side for most meals. You may dine indoors or outside in the courtyard. Casual to smart-casual attire. Reservations accepted. (91-011-2923-2467)

3 Karim's
This little restaurant is tucked away on a side street, but Delhi-ites and visitors in the know come here for the mutton. The meat is available in a variety of sweet or savory gravies. Other delicious meals include the lamb stuffed with chicken, rice, eggs and fruit, and the fresh, hot curries. No matter what you order, be sure to get some homemade bread on the side. No credit cards. Casual attire. (91-011-2326-9880)

2 Chor Bizarre
The name of this restaurant, which is billed as India's Restaurant, means "thieves' market," and the mish-mash of nostalgic décor and furnishings echoes the sentiment. You might dine on an old sewing table or sit in mismatched chairs. The salad bar used to be a 50s vintage Fiat. Don't let the fun decorations distract you from your wonderful meal. The specialty here is Kashmiri (Northern Indian) cuisine. This style of cooking tends to be a bit milder than much of Indian cooking. Try the lamb meatballs flavored with cardamom or the mutton stewed in yogurt, cardamom and anise. Several sampler platters are available if you can't decide on just one entrée. Smart-casual to stylish attire. Reservations suggested. (91-011-4366-3600)

1 Bukhara
In the 20-plus years since this restaurant opened its doors, it has become legendary. The cuisine is traditional "Northwestern Frontier" Indian, which is a style that focuses on meats cooked in a clay oven called a tandoor. Order any item on the menu and you can't go wrong. The house specialty is the dal — black lentils are stewed for 24 hours with tomatoes, ginger and garlic. The chicken kebab marinated in cream cheese, vinegar and coriander is also exceptional. Vegetarians should sample the tandoori salad with vegetables and pineapple, with a side of homemade roti (Indian bread.) Smart-casual to stylish attire. Reservations necessary. (91-011-2611-2233)
