Rose.Rabbit.Lie. Redefines The Traditional Las Vegas Dining Experience

New Strip restaurant offers guests a real feast for the senses

The most talked about new restaurant in Las Vegas is, ironically, almost impossible to describe.

A restaurant unlike any other, Rose.Rabbit.Lie. inside The Cosmopolitan of Las Vegas blurs the lines between theater, club, restaurant and bar to offer guests a truly unforgettable dining experience. Reinventing the concept of dinner and a show, diners are treated to live performances throughout the evening from the cast of “Vegas Nocturne,” the jaw-dropping variety show that runs inside the theater at Rose.Rabbit.Lie. Guests never know who might be performing while they dine–singers, tap dancers, acrobats–or where, but the acts help create an atmosphere that’s unmatched anywhere else on the Strip.

While the performers make Rose.Rabbit.Lie. a worthy addition to the Entertainment Capital of the World, the food by executive chef Wesley Holton is equally memorable. Ideal for the social club atmosphere it’s served in, the menu features a variety of shareable plates inspired by classic dishes.

Guests can start their meal with the tasty Herb Brioche Rolls with Bordier butter and Maldon salt or the flavorful Steak Tartare with Worcestershire gelée, cornichon and egg emulsion before splitting one of the more savory selections, like the succulent Braised Pork with Anson Mills polenta air, black truffle and gremolata. The Steak Frites with pommes soufflé, umami butter and escarole are also quite enjoyable, as are the bite-size Chicken Oysters. Whatever you decide on, be sure to try the tender Short Rib Stroganoff with herb pasta and roasted maitake mushrooms–it’s delish!

For more discerning diners, Rose.Rabbit.Lie. features an extensive caviar selection, with options ranging from the $15 Caviar Tacos to a kilo of Russian Osetra Caviar for $5,054. There’s also a Feast section on the menu for larger parties, offering such delectable items as the Whole Roasted Giant Alaskan Red King Crab, Beef Wellington and Mary’s Free Range Chicken. Portions feed anywhere from 6-10 guests, so don’t be scared off by the extravagant prices.

While it can be easy to fill up on the many tempting menu selections, be sure to save room for dessert. The Chocolate Terrarium, in particular, has to be seen to be believed. An edible garden on a plate, the decadent dish features chocolate buttermilk cake, chocolate “soil,” hazelnut ice cream, edible flowers and herbs served under a glass dome. Just like Rose.Rabbit.Lie., it’s safe to say you’ve never seen anything like it before!

Guests can wash everything down with a concoction from Rose.Rabbit.Lie.’s expansive cocktail list or some bubbly from its extensive selection of champagnes. For something non-alcoholic, the restaurant serves several types of tea that are named after their wine counterparts based on flavor–for example, a light and playful White Tea “Riesling” or a velvety and robust Black Tea “Merlot”–proving that nothing at Rose.Rabbit.Lie. is ordinary.

The bar and dining room at Rose.Rabbit.Lie. are open Wednesday-Saturday from 5:30 p.m.-4:30 a.m.; “Vegas Nocturne” performs Wednesday-Saturday at 7:30 p.m., 9:30 p.m. and midnight. Be sure to give yourself plenty of time to explore the maze-like venue, which includes such distinct rooms as a library, study, music room, swimming pool and ballroom.
