Tom Colicchio's Heritage Steak is tops with taste buds

Tom Colicchio’s Heritage Steak opened at The Mirage on Aug. 19 and showcases the James Beard Award-winning chef’s passion for cooking with fire. Located within the resort’s lush garden atrium where Kokomo’s used to be, the rustic 230-seat restaurant boasts a menu that focuses entirely on meats prepared over an open flame using a charcoal grill, a wood-burning oven and a Grillworks Infierno: a versatile grill that also serves as a hearth, smoker and broiler. After placing their orders, diners can watch as the chefs prepare their antibiotic-free meats in the restaurant’s striking open kitchen.
Guests can start their meal with an array of palate-pleasing appetizers, from the Ash-Roasted Bone Marrow to the Grilled Octopus. The Soy-Chili Glazed Skewers are particularly tasty, especially the skirt steak skewers, which are well marbled for added flavor. Be forewarned, though, that, despite the name, the Soy-Chili Glazed Skewers aren’t actually served on skewers. Instead, the dish comes served more like a salad, with the black garlic, watercress, cilantro and basil on top of the meat in a bowl. It’s still sharable, though the portion size and presentation make it easier for an individual to consume the dish versus splitting it with others.

For the main course, not surprisingly, the steaks at Heritage Steak are not to be missed. The tender 10-ounce Natural Prime Filet is arguably one of the most succulent cuts of beef in town and goes great with a side of the creamy Potato Purée. A selection of seafood, poultry and pork dishes are also available, guaranteeing there’s something for everyone on Heritage Steak’s mouthwatering menu. A delectable dessert menu and an impressive drink list that includes a collection of rare and high-end whiskies complete the sizzling steakhouse experience.
