Chef Duarte Mathias has created a unique menu momentos, which lists a series of dishes he modestly describes as "honest cuisine" – an affectionate nod towards his grandmother's cooking that inspired his own passion for food.
The result is a choice of classical Portuguese gastronomy that's been lent a modern flourish. The amêijoas à bulhão pato – clams in garlic, white wine and coriander – is an entrada he always likes to recommend. Principal dishes include the unusual asa de raia braseada, braised stingray, which is accompanied with lobster, cream potato and leek. Equally imaginative are the desserts: try the pêra recheada, stuffed pear smothered in honey, walnuts and a reduction of port wine and vanilla ice cream.
