Best Chile Verde in Colorado: El Taco Rey

King's Chef Diner, Oscar's Cafe, Absolute Bakery & Cafe and El Chingon also winners

There's a longstanding battle between Colorado and New Mexico for green chile supremacy. While Hatch chiles reign supreme in New Mexico, Colorado prefers the pueblo chile – a pepper with roots in the Oaxaca region of Mexico. When you see chile verde on the menu in Colorado, it refers not to the pepper itself, but to a soup or sauce made from stewed green chile peppers, often braised with pork, tomatillos, serranos and spices. And there's not just one way to eat chile verde either. It comes in a bowl with a tortilla on the side, or smothered over burritos, enchiladas or even a plate of french fries.

    Satisfying Mexican food cravings in Colorado Springs since 1976, El Taco Rey serves their green chile in several forms, including the popular avocado pork burrito smothered in the tangy, spicy sauce. Purists can order a cup a la carte with tortillas for dipping.

    Colorado Springs

    Ranked among America's best diners since it opened for business in 1956, King's Chef Diner is known for its Colorado green chile, made from locally grown peppers. At breakfast, get it with bacon, eggs, cheese and flour tortillas, or atop a mound of hash browns and Texas toast. Later in the day, the open-faced green chile cheeseburger wins rave reviews.

    Durango

    Family owned and operated for nearly four decades, Oscar’s Cafe features their house-made pork chile verde in several menu items. Diners can get everything from hash browns to omelets smothered in it or order a cup on the side. This variation is made with slow-roasted pork roast, New Mexico green chiles and a blend of Southwestern spices.
