This contemporary American gastropub specializes in artful food using the best local ingredients from Arizona farmers and food purveyors. Executive chef Stephen Jones has put together an ingredient-driven menu--divided into starters, farm & garden, sea & ocean, meat & game, and flatbreads--that relies more on oils, brines, marinades, tapinades, and rubs than fatty creams and butter. Food is served on "social plates" to encourage sharing and to allow guests to experience a range of flavors and textures during their visit.
From the starter menu, try the Hickman's Farm Deviled Eggs made with brioche, smoked ham and dijon, or the crunchy Falafel Croquettes, which combines fava beans with cumin and are served with a harissa sauce, a traditional Middle Eastern hot red pepper paste. Over on the meat & game menu, the Kentucky Fried Quail offers a down-home take on a delicacy, served with foie gras cornbread, red beans, and a sausage gravy.
