As part of the ongoing enhancement effort, the meeting and function space were recently expanded and refreshed, the pool received an extensive makeover, and the lobby was renovated. Guest rooms received color makeovers to match the vibrant hues of the desert in bloom, as well as state-of-the-art technological upgrades.
Now, the AAA Five Diamond property is debuting a new restaurant as well. Proof, a unique new restaurant concept is described as a contemporary American "canteen." The restaurant's decor draws on Scottsdale history and the spirit of the Old West. Communal tables on railroad track run perpendicular through the dining room, and scenic views of Pinnacle Peak can be seen throughout the dining room.
The menu at Proof draws on classic American dishes with Southern flair, including fried green tomatoes, po'boys, and chicken and waffles. An old fashioned soda fountain makes homemade milkshakes, malts and floats and other special treats. Adult guests can enjoy small batch and craft distilled American spirits, more than 50 microbrews, and a wine menu featuring bottles from across the United States.
