Fans of Omni La Costa Resort's signature restaurant BlueFire Grill know that Chef de Cuisine Greg Frey, Jr. is passionate about his farm-to-table menu. Next on his plate is a new dinner series called Land to Linen, which will showcase the restaurant’s partnerships with local San Diego farmers and purveyors.
On the first Thursday of each month (starting October 3), guests will dine on a four-course, family-style meal at the casual and vibrant BlueFire Grill. The seasonally-inspired menus will be served at long, communal tables where guests will experience first-hand Chef Frey's passion for San Diego’s fresh ingredients and the attention to detail he infuses into every bite.
Special guests in attendance will include local partners and purveyors, as well as industry experts who will mingle with guests during this intimate dining experience. Wine pairings will be provided by BlueFire Grill's Joe Baumgardner, sommelier and general manager. BlueFire Grill is known for its extensive wine list and fun vibe.
As an example of the series, the October 3rd Land to Linen dinner menu is as follows:
- Heirloom shelling bean soup
- Bloomsdale spinach salad
- California swordfish belly, whole-roasted Shelton Farms chicken and pork loin
- Windrose Gravenstein apple crisp with oak ice cream
