Set within The Lobby Lounge and Terrace at the Fairmont Pacific Rim, The RawBar has been given the title of Vancouver’s first 100% Ocean Wise sushi restaurant by the Vancouver Aquarium. Ocean Wise is a program that the Vancouver Aquarium started, and it's aimed to educate about issues surrounding sustainable seafood so that consumers can make empowered choices.
At The RawBar, all of the fish they use is caught using sustainable methods, so you can feel good with each bite. The price point is definitely higher at The RawBar, but you know you're getting top-quality ingredients here.

Chef Taka Omi's newly enhanced menu takes this virtuous seafood and turns it into beautiful, mouth-watering bites with an authentic touch. On the dinner menu, expect to find a variety of sashimi, nigiri, rolls, small plates, platters and a few different miso soup choices.
The yellowfin tuna poke is dressed with soy, sesame, scallion, mango, jalapeño, red onion and cilantro and served atop a bed of seaweed salad. It's fresh, light and a great way to start your meal.
Can't decide what roll to get? The Lobby Lounge Roll has a little bit of everything and consists of rainbow-rolled with wild albacore tuna, Lois Lake steelhead, avocado, mango, Qualicum scallop, dungeness crab, masago and cucumber. It's a feast for your eyes and stomach!
The platters are a great way to sample a variety of dishes, and they're ideal for sharing. If you're feeling adventures, order the Omakase (chef's choice) for a real treat.
For lunch, they offer bento boxes, donburi rice bowls, salads, miso soup, maki rolls and appetizers.

While there are a couple of sake choices to wash it all down, the wine and cocktail list is not to be missed.
In the mood for a cocktail? The Pacific 75 is refreshing and crisp, and it goes down easy (perhaps a little too easy). Made with Moët & Chandon, Tanqueray 10, basil and grapefruit, it's a dreamy variation of a French 75.
While the food and drinks are easy to enjoy, the live music is an added bonus. Seven nights a week, guests can enjoy tunes by a host of talented musicians and emerging artists.
Things tend to get a little more lively later in the evening on weekends, making it a fun spot to stay for a few cocktails after dinner.
