Located in the basement of the Georgian Terrace, Proof and Provision has an underground feel. Complete with unique cocktails and small plates with playful names like the “When I Was 8,” made with fruit loops and the Zombie Neck-tai, there is also a good selection of beer and wine for those who prefer it. The Southern 75 combines Bourbon and beer for a unique taste. Barrel aged cocktails like the Maximilian Affair are quite delicious too. All items are made in house including the ketchup and mustard. Chef Zeb Stevenson designed the entire layout from paint colors to the lighting fixtures. He is as picky about the décor as he is about the quality of the food and drinks. He also is big on the idea of comfort food or foods that remind guests of their childhood, hence the grilled cheese sandwich and the Pig in a Blanket on the menu. Some of the other menu highlights are the Confit Chicken wings, Chicken Liver Mousse and the English Breakfast, a sandwich with blood pudding, crumpets and a fried egg. Prices are much more inexpensive than the upstairs restaurant Livingston. There is also a three-hour complimentary valet.
