Although known for croissants and foie gras, French food is also light and fresh - like a spring day - if you go to George Trois. Chef Michael Lachowicz uses innovative techniques to take dining to an artful level without the heaviness and calories French cuisine has been associated with in the past. After all Julia Child even said, "You don't have to cook fancy or complicated masterpieces - just good food from fresh ingredients." In Dover Sole Provencal, for example, "chicharron" are 100% vegan using tapioca in place of animal skin and natural chlorophyll adds a pop of green spring color. Pot au Feu with English peas, morels and pickled mustard seeds cooks for 18 hours resulting in deep flavor. Chef's Banana & Sicilian Pistachio dessert is gluten-free yet indulgent. Add that to perfect wine pairings and a country French ambiance, and you'll be singing, "Can't Stop the Spring."
