The Roman food world gasped when Spanish implant Alba Esteve Ruiz announced she'd be leaving the stellar and contemporary Marzapane. It held its breath for a while as she took a time out. And now's she back and better than ever. And at 30 years of age, it seems her best is yet to come. It's hard not to be wowed by the interior design of her new home, Antica Fonderia with its flash metallic, marble and Murano glass features. And even more so by her prowess in the kitchen. To her refined repertoire she brings a new element - that of coal, smoke and flames, and an elegant focus on surf 'n turf. The seven course tasting menu is a journey through texture and technique and costs €110. In the entrée, first and second course department there are 5 dishes in each to choose from with a couple of the staples Alba has come to be known for, like her rich carbonara. Other highlights include the mixed turnips cooked on coal served with blue goats cheese, beef tongue and scallop, and the Sicilian grand fettuccine with a decadent wild boar ragù. Wines are presented by talented sommelier, Michel Vergari Magoni (Alba's husband) and cocktails also turn on the 'wow' factor. TRAM: 8.
