It wasn't that long ago that a champagne bar opening on N. Rampart Street would have been unthinkable, as out of step with the neighborhood as proposing a charcuterie shop on St. Claude (yes, we have that too.) But with vision, pluck and a serious love of bubbles, owner Crystal Hinds opened Effervescence in 2017, a swanky but approachable bar and bites spot with a swell courtyard and a crackerjack team in the kitchen. Co-chefs Evan Ingram and Brenna Sanders, a team in the kitchen and in life, create toothsome bites with a polish that belies their fine dining roots - their experience includes time at Restaurant August in the CBD. Sip from a copious list of more than 30 sparklers by the glass, including agusbourne brut reserve '13 ($11 for a half, $22 for a full) from Sussex in the U.K. Who knew, but Hinds declares Cornwall the new Champagne region thanks to climate change. Nibble the likes of royal red shrimp with kaffir aioli and caviar lime, a fantastic beet root carpaccio with avocado, burrata, barley and sunflower seeds or spring for the pricey ($50) Gulf seafood plateau, arranged with bits of all the fresh seafood on the menu, including local bowfin Cajun Caviar. Effervescence is as spendy as you want to get if you order the sturgeon caviar service ($95) and drink the most expensive bubbles. But there's also a super happy hour, wines and bubbles by the half glass and champagne flights to sample. This place has date night down, cold and fizzy. With its romantic vibe and soundtrack of popping corks, what's not to celebrate?
