Nola barbecue fans already know about Shannon Bingham and his Central Texas-style smoked meat goodness. He was the pitmaster at Blue Oak BBQ for four years, helping to put that Mid-City spot on the map and earning accolades including three top five finishes at Hogs for the Cause and Grand Champion in 2017. Now he has his own place, Emmylou's, in the St. Roch Market. Named after his grandmother, Emmylou's will serve Central Texas-style smoked meats like beef cheeks, ribs, and pulled pork all smoked on the premises as well as classic barbecue sides including potato salad and coleslaw. Look for local ingredients and seasonal specials, along with an expansive line of charcuterie. Bingham's BBQ cred is impressive - he apprenticed at some of the best barbecue restaurants in Austin, Houston, and Dallas and worked under acclaimed chefs Sue Zemanick and Donald Link.
