Eat's motto is "Good food for good people, made with love in downtown Las Vegas," and this breakfast and lunch "joint" has been winning fans with that attitude. Chef Natalie Young's menu is full of soulful and delicious breakfast food, like the golden-brown pancakes with chicken apple sausage and maple syrup, or her truffle egg sandwich with two scrambled eggs, onions, feta and bacon. The Huevos Motulenos is prepared with over-easy eggs, chilies, black beans, peas, feta and sautéed bananas. And who can resist shrimp and grits? Eat was among the first of a wave of new restaurants in downtown Las Vegas to focus on sustainable, fresh, locally-sourced and organic ingredients, and it continues with that philosophy today.
