Spago's relocation to the Bellagio gave this well-known restaurant a new look and a new menu, plus a fabulous new view of the hotel's famous dancing fountains. Chefs here make weekly trips to the Santa Monica Farmer's Market to get the ingredients for Puck's signature California dishes. Start off your meal with something like the spicy tuna tartare with sesame miso cones, wasabi, pickled ginger and bonito flakes or a smoked salmon pizza before moving on to saffron risotto with Santa Barbara Spot Prawns, spring onion, zucchini blossom and a shellfish emulsion. Look for dishes like the crispy skin black sea bass with sweet pea puree, confit shallots, snap peas and lemon froth or the seared Alaskan Halibut, rack of lamb or New York steak. Spago serves lunch and dinner, along with offering pre-theater and bar menus.
