Webster's dictionary defines maverick as "someone who doesn't go along with the group or the norm," and Bangkok's latest gourmet trendsetter Maverick Restaurant and Bar most certainly fits this moniker. The restaurant describes itself as an avant-garde bistro and an open kitchen, but this is just the tip of the iceberg. It also features molecular tapas (plenty of use of ice, fire, air, foam, spheres, emulsions and caviars), an artisan bakery, a gastro lunch spot and a dining room to sample elegant sit-down chef's table dinners.

Maverick is housed in an office building in the busy Asok district; the interior, nevertheless, feels ultra relaxed, with a design focusing on the laid-back bar area. The traditions here follow the molecular masters Ferran Adrià ('El Bulli'), Hervé This and Heston Blumenthal ('The Fat Duck') and take things to new gastronomic heights.
The wildly eclectic tapas menu is a real standout, and if you have a group, a 25-tapas tasting menu is definitely the way to go. It features everything from pop shrimp with wasabi mayonnaise to caviar oil and chorizo; Spanish tortilla that comes as foam, with rosemary potatoes and ham; and Catalan foie gras, served with yuzu and figs.
The dinner menu is just as exciting. Try rack of lamb with saffron and fennel or duck confit with sauteed porcini mushrooms. Or go for Chateaubriand in a bearnaise sauce. You get the picture of what's up here.
There are also Chef's Table evenings, where just 12 diners get seated with the master chefs, who explain techniques and whip out exquisite molecular meals, with ten-course dinners going for 3500 baht, also available with wine pairings.
Exotics included here feature dishes like Pigs Can Fly (Kurobuta suckling pig, yuzu and lemon pillow, with velvet peach) or Beef Cubism (Miyazaki grain-fed Wagyu beef braised for 14 hours and made with beetroot powder, blue cheese marshmallow and beef glaze).

The drinks menu is just as stellar, with cocktail creations such as Heart on Fire (tequila, green chartreuse, lemon juice and egg whites) or Cuban Cigar (cachaca, apricot brandy, mint, lime juice and cinnamon syrup) to go along with the superb wine cellar (over 30 wines by the glass alone) and varied selection of beers.
There are several chefs in operation here, some of whom have Michelin-star pedigree. And in addition to the elegant dinners and executive gastro lunches, they also find time to do artisan breads and pastries, ice cream and specialty coffees.
With such a luxurious array to choose from, there ought to be a niche for everyone to find satisfaction at Maverick Restaurant and Bar.
