Nimitr means "special dream" in Thai, and with the dazzling creations coming out of the nouvelle gastronomy kitchen here, foodies visiting Bangkok will indeed be on cloud 9. Set up on the 27th floor of the elegant 137 Pillars Bangkok hotel, the restaurant overlooks the Bangkok skyline and offers an incredibly romantic experience come dusk, bathed in hues of blue and gold lighting that match the neon panorama outside. Even more overwhelming an experience though is the food here, best labelled as cutting edge fine Oriental gastronomy. Special sous chef Nanang Aditama, who has worked chef's tables from Bali to the Maldives, has designed and crafted together a unique Asian-fused menu here, with presentations that rival molecular Bangkok stalwarts like Gaggan and Sra Bua, both in look and taste. Thai favorite tom yum goong gets a unique makeover here, served as a cool gazpacho, with lobster terrine and Ikura caviar, retaining all of its traditional spice and flavor and with a unique, divine broth. In another dish, Sous Vide Snowfish, Nordic cod gets marinated 24 hours in sweet miso and lotus root dashi, giving the best tastes of Japan, yet is then served with a celeriac mousseline for an extra twist. The standout entree is the lamb tandoori, which takes barbecued organic New Zealand lamb cutlets and serves them with nan bread made of ravioli and ghee-buttered edamame beans, again cutting across several Asian and European cuisines to create a magical dish composed of an array of flavors. Chef Nanang perhaps saves his best for last though, going back to his Indonesian roots and serving up pisang ijo, a traditional iced banana dessert from Makassar. Steamed banana rolls are put on pandan rice mousse and served with coconut ice cream inside of a a perfectly created ice grotto ball, which melts as you dig into the mesmerising creation. Nimitr excels on every level, from venue to presentation, and most importantly, in its delectable food. It's the perfect spot for a special occasion, an important date, or just to sample some of the creative cuisine that is putting Bangkok at the forefront of the Asian food map.
