In May 2012, Flora Restaurant at the Boulevard opened its doors in Salt Lake City's Holladay, reviving a well-established restaurant locale. A modern American eatery, Flora brings delicious, healthy and inventive cuisine to the mouths of the Cottonwood canyons. Offering a succinct, yet diverse menu, Flora presents a diverse selection of salads, house-made pastas and entrees of pork, beef, fish and poultry. In addition to its fixed menu, Flora creates several specials in the appetizer and entree categories. Vegans won’t miss out either; each week, a special appetizer and main course is tailored to this group.
Owned and operated by Chef Bryan Rubey, Flora utilizes this man’s 15 years of experience in the restaurant business. No slouch, Rubey began his career in the industry as sous chef at a fine French restaurant in Mobile, AL. Since then, he has held high positions at top-notch Northern Italian, exotic American, other French and modern American establishments.
Most recently, he worked at the famed Aerie Restaurant, where he managed and held the title of Chef de Cuisine. A career of learning from highly respected executive chefs has given Rubey an expertise in the arts of French, Italian and modern American cuisines. Rubey brings forth the fruits of his successful and prestigious career at his very own Flora.
