Eating healthy these days is usually either expensive or time consuming – or both. That means starting off your morning with a healthy breakfast either takes more time than you have to spare before running out the door, or spending $9 on a green juice, and – Gwyneth Paltrow excluded – most of can't really afford to do that every morning.
This green smoothie – with spinach, apples and pecan or almond milk – is a great alternative to that organic juice place down the street. It takes almost no work other than cutting up an apple, dumping a few ingredients in the blender, and pushing a button.
You'll be out the door five minutes after you start preparation. That's something even Gwyneth can get behind.

Ingredients
- 1 large green apple
- 1/2 cup pecan milk or almond milk
- 1 tablespoon maple syrup
- 3 cups fresh spinach
- 10 ice cubes
- 1 tablespoon fresh squeezed lemon juice
Preparation
- Core the apple and cut it into chunks, leaving the skin on.
- Place the first five ingredients in a blender and blend. Add the lemon juice and blend for a few seconds again. Taste, and add a touch more maple syrup or lemon juice as desired. Serve immediately, or refrigerate for up to 1 day. Makes one large or two small smoothies.
