Every culture has its own version of barbecue. America's got its smokers, Brazil has those seemingly endless skewers of churrasco,meat and India's got tandoori.
India's iconic clay ovens – called tandoors – are kind of like a cross between conventional ovens and grills, using wood or charcoal as fuel for a mix of both direct and convection heat. Tandoors are used to cooked anything from veggies to skewers of chicken at extremely high temperatures.
India's most famous tandoori dish – at least outside of India – is probably tandoori chicken. These skewers of chicken have a signature bright red color thanks to a yogurt marinade seasoned with garam masala, turmeric and chili powder, among other spices.
We're assuming you don't have a clay oven laying around in your home, so this recipe calls for a standard oven. And rather than using full-sized chickens, it calls for chicken wings – which is perfect if you want to have a party or serve these as an appetizer.
These little guys pack a serious punch, so serve with some cooling raita (a mix of yogurt, mint, cucumber and salt) to help ease the pain.
- 1/4 cup plain yogurt
- 2 teaspoons garam masala
- 1 tablespoon dried fenugreek leaves
- 1/2-inch knob fresh ginger, chopped
- 3 cloves garlic, chopped
- 1/2 teaspoon turmeric
- 1/2 teaspoon red chili powder
- 2 tablespoons cilantro, chopped
- 1 beet, boiled and grated
- 1 tablespoon olive oil
- To taste salt
- 1 pound chicken wings
- Preheat oven to 400 degrees.
- In a medium bowl, combine all of the ingredients except the chicken.
- Taste the marinade and adjust seasoning as desired. I tend to add more salt after I taste it. Toss in the chicken. Make sure the yogurt marinade evenly coats each wing. Marinade the chicken for at least two hours in the refrigerator – overnight will yield the best results
- Stack a wire rack on a baking pan. This will give you crispy wings because the fat from the chicken will drain away. Arrange the chicken wings on the wire rack and cook in the oven for about 40 – 50 minutes. Serve with a cool mixture of yogurt, mint, salt, and cucumber.
