BBQ Pork Rub
  • 10 pounds pork ribs
  • 1/2 tablespoon ground ginger
  • 1/2 tablespoon ground onion
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon ground black pepper
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 1/4 cup brown sugar
  • 1/4 cup kosher salt
Chipotle BBQ Sauce
  • 4 cloves garlic, minced
  • 1/4 cup butter
  • 4 cups ketchup
  • 1 1/3 cups brown sugar
  • 1 cup Worcestershire Sauce
  • 1 cup lemon juice
  • 6 chipotles in Adobo
  • 1 teaspoon cayenne pepper
  • 1 tablespoon fresh oregano
  • Kosher salt, to taste


To prepare Chipotle BBQ Ribs

  1. Rub the racks with prepared seasoning rub and refrigerate for 6-8 hours (or overnight)
  2. Preheat oven to 300 degrees Fahrenheit
  3. Roast the pork rib racks slowly for about three hours or until tender
  4. Glaze with chipotle BBQ sauce during the last hour

Prepare Chipotle BBQ Sauce

  1. In a saucepan, sauté garlic in butter until soft
  2. Add all other ingredients and simmer until thickened
  3. Puree and season with salt and pepper
