Rosé is the unofficial wine of summer. It's the drink that's taken over your Instagram feed, the patio of your local wine bar and even your friend's torso as they try too hard to be fashionable with that "rosé all day" T-shirt.

And while rosé is perfectly refreshing and delicious on its own, it has room to be dressed up. This daytime cocktail combines the tartness of pomegranate and sweetness of simple syrup with the effervescent floral fruitiness of sparkling rosé.

This is stupidly easy to make and dangerously easy to drink for hours, and while "pomegranate thyme bubbly rosé all day" doesn't quite have the same catchy ring to it as the original saying, the statement will be every bit as true: once you taste one, good luck stopping.

Ingredients

  • 1/2 cup pomegranate juice
  • 3 tablespoons simple syrup
  • Sparkling rosé wine
  • For garnish fresh thyme

Preparation

  1. Combine juice, sugar, water and simple syrup.
  2. Pour into flute, top with rosé and garnish with a sprig of fresh thyme.
